Low Carb Cheesecake Bites with LC Fruit Preserves- 5 different flavors to choose from, or try them all!
Ingredients
For the Crust:
- 1 cup LC-Biscuit and Pie Crust Flour
- 2 Tbsp LC-Brown Sugar Sweetener with Erythritol
- 3 Tbsp butter, melted
For the Filling:
- 2- 8oz. packages cream cheese, softened (not light or neufchatel)
- 1 tsp pure vanilla extract
- 2 eggs
- ½ cup LC-Brown Sugar Sweetener with Erythritol
For the Topping:
- ½-1 Tbsp LC Fruit Preserves
Instructions
- Preheat oven to 325 degrees
- Line a muffin tin with baking cups
- In a medium mixing bowl, combine the crust ingredients and mix until it holds together
- Press about 2 Tbsp of the crust mixture into the bottom of each cup
- In a separate mixing bowl beat cream cheese, vanilla extract and sweetener until well blended
- Add your eggs one at a time on low speed
- Spoon mixture over crusts, filling about ¾ of the way up
- Bake for 20-25 minutes or until centers are just about set
- Cool completely before topping with LC Fruit Preserves
- Enjoy!
