Low Carb Margarita Bars

Method:

  1. Preheat oven to 350 degrees F.
  2. Line an 8×8 baking dish with foil or parchment paper and spray with non-stick cooking spray.
  3. In a medium bowl, mix the LC Yellow Cake Mix, melted butter, egg and 1 teaspoon lime zest until combined.
  4. Press the mixture into the bottom of the prepared baking dish to form a crust.
  5. Using an electric mixer, beat the softened cream cheese, LC Confectionery Powdered Sweetener-Erythritol, vanilla, lime juice, tequila (if using), eggs and lime zest. Mix until creamy, about 3-4 minutes.
  6. Pour the mixture over the crust and bake for 40-45 minutes. The edges will be slightly brown and center might appear not set. 
  7. Remove from the oven and let cool for 20 minutes.
  8. Dust the top with more LC Confectionery Powdered Sweetener if desired.
  9. Slice into squares and enjoy!
  10. Wrap leftovers in plastic wrap and place in the refrigerator.
