Low Carb Pumpkin Whoopie Pies

These delicious fall treats will melt in your mouth!



Pumpkin Cookies:

  • 1 1/4 c. LC-Pumpkin Cookie Mix
  • 5 Tbsp butter, melted and slightly cooled
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 5 Tbsp canned pumpkin puree

Cream Cheese Frosting:


For the cookies:

  1. Follow instructions on the package of LC-Pumpkin Cookie Mix
  2. Separate prepared dough into 8 equal spoonfuls and bake according to package instructions

For the filling:

  1. Using an electric mixer, blend the cream cheese and butter until smooth
  2. Add powdered sweetener and vanilla extract, blend until well combined

Assemble whoopie pies with 1 Tbsp cream cheese frosting between 2 pumpkin cookies

Serve and enjoy!
