“Not So Impossible” Coconut Pie


A low carb version of the classic, with only 1.2g carbs per slice (1/8 pie).

"Not So Impossible" Coconut Pie
Recipe type: Dessert
Serves: 8
  1. Preheat oven to 350° F.
  2. Using a blender, put all EXCEPT the coconut in and mix until smooth.
  3. Add the coconut and stir into batter.
  4. Spray a 9" pie plate with a cooking spray.
  5. Pour the batter into the greased pie dish and bake for 50 to 60 minutes, or until custard in the center is firm.
  6. Once it's cooled down, place it in the refrigerator to store it.
  7. Whipped Cream goes nicely on a slice of this pie!
