This means that when a food is\nchemically analyzed in a lab, the grams of protein, fat, alcohol, water, and\nash are subtracted from the total gram weight of the food sample, and the\namount left over is considered the total carbohydrate value. Using this method,\nthe carbohydrate value contains sugars, starch, AND fiber, and may also contain\nsmall amounts of other compounds that do not fit specifically in one of the\nother categories. This defines Total Carbohydrates in the food composition for\nnutrition labeling in the U.S. and Canada. <\/p>\n\n\n\n<p>For nutrition labeling most other\nplaces in the world, including the EU and Mexico, Total Carbohydrates are\ndefined as \u201cavailable carbohydrates,\u201d which does not include soluble or\ninsoluble fiber. This value is determined by adding up the sugars and starches\nin the food only and not including any fiber. The fiber is listed separately on\nthe label, and is not part of the carbohydrates listed. <\/p>\n\n\n\n<p>Calories of all carbohydrates in the\nU.S. are calculated at 4 calories per gram, while fat is calculated at 9\ncalories per gram. This makes it advantageous to eat low fat foods, if you want\nlow calories. Eating a low carb diet and following calorie counting are at odds\nwith each other because of these facts.<\/p>\n\n\n\n<p>Calorie calculations other places in\nthe world are different as follows: Sugars &amp; Starches are calculated at 4\ncalories per gram, while fiber is calculated at 2 calories per gram. Most\ncountries agree on 9 calories per gram of fat as the standard.<\/p>\n\n\n\n<p>Basically speaking, the rest of the\nworld is on a NET or Effective carb labeling system. While the U.S. and Canada\nare left to have consumers do math calculations on the label and subtract fiber\nfrom the Total Carbohydrate label line on U.S. labeling, in order to match the\nother world labeling system, which is basically NET carbs or effective carbs.<\/p>\n\n\n\n<p>Also in this category of largely\nindigestible carbohydrates, are sugar alcohols &#8211; such as mannitol,&nbsp;sorbitol,\nxylitol, and other polyols, which are modified alcohol molecules that resemble\nsugar. <\/p>\n\n\n\n<p>In calculating net carbs, most\nmanufacturers take the total number of carbohydrates a product contains and\nsubtract the fiber and sugar alcohols as the rest of the world does, because\nthey are not digesting as sugars and starches in your body causing blood sugar\nlevel rises. These types of fiber and sugar alcohol carbohydrates are thought\nto have a minimal impact on&nbsp;blood sugar levels. <\/p>\n\n\n\n<p><em>So, now we understand that\u2026.Net carbs<\/em> are the total amount of <em>digestible<\/em> carbohydrates in the food we\nare consuming. These are the carbs you\u2019ll want to track while following a low\ncarb diet, as these are the actual total carbs your body will absorb.
