This recipe is the solution! They are easy to make with options to pan fry or bake and deliciously keto. You can also switch out yellow squash or use a mixture of both! The addition of <strong>LC Foods&#8217; Thick n Saucy<\/strong> eliminates the need for high carb binders, such as flour or bread crumbs. This recipe makes about 12 fritters, depending on the size you make them.<\/figcaption><\/figure>\n\n\n\n<h2>Ingredients:<\/h2>\n\n\n\n<ul><li>3\u00a0medium\u00a0zucchini,\u00a0shredded<\/li><li>1\u00a0teaspoon\u00a0salt<\/li><li>2\u00a0large\u00a0eggs<\/li><li>1\/4\u00a0cup\u00a0crumbled feta cheese or grated parmesan<\/li><li>1\/4\u00a0cup\u00a0shredded mozzarella<\/li><li>2\u00a0cloves minced\u00a0garlic<\/li><li>2 green onions, finely chopped<\/li><li>1\/4\u00a0cup finely chopped parsley or herbs of your choice<\/li><li>1\/4\u00a0teaspoon ground black pepper<\/li><li>2 teaspoons <strong><a href=\"https:\/\/www.lowcarbfoods.com\/low-carb-preserves-dairy-miscellaneous\/low-carb-thick-n-saucy\" target=\"_blank\" rel=\"noreferrer noopener\">LC Thick n Saucy<\/a><\/strong> (or more if the zucchini is still too wet)<\/li><li>1\u00a0tablespoon\u00a0oil of your choice (if frying)<\/li><\/ul>\n\n\n\n<h2>Method:<\/h2>\n\n\n\n<ul><li>In a large bowl, combine the shredded zucchini and salt; set aside for 10 minutes. After ten minutes, drain water from the zucchini by squeezing it with your hands.<\/li><li>In another bowl, whisk the eggs and add the shredded zucchini, crumbled feta, mozzarella, garlic, green onions, and black pepper. Stir to combine.<\/li><li>Stir in the <strong>Thick n Saucy<\/strong> until fully incorporated. If the mixture seems too loose, add a little more Thick n Saucy.<\/li><\/ul>\n\n\n\n<h3>To Pan Fry:<\/h3>\n\n\n\n<ul><li>Preheat a large pan to medium-high heat and add the oil.<\/li><li>When the oil is hot, scoop the mixture into the pan using an ice cream scoop or large spoon and slightly flatten the fritters.<\/li><li>Cook about 3 minutes and flip cooking the other side until they are browned and cooked through.<\/li><li>Transfer to a paper towel lined pan and repeat.<\/li><\/ul>\n\n\n\n<h3>To Bake:<\/h3>\n\n\n\n<ul><li>Preheat oven to 400 degrees.<\/li><li>Line a large baking sheet with parchment paper and spray with cooking spray.<\/li><li>Scoop the zucchini mixture onto the baking sheet and slightly flatten.<\/li><li>Spray the tops of the fritters with more cooking spray.<\/li><li>Bake for 20 minutes, flipping halfway through.<\/li><\/ul>\n\n\n\n<h3>To Serve:<\/h3>\n\n\n\n<ul><li>Garnish with lemon wedges and fresh chopped herbs. Serve with your favorite low carb dipping sauce, such as <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/www.lowcarbfoods.com\/community\/recipes\/keto-creamy-whipped-feta-dip\/\" target=\"_blank\">Keto Creamy Whipped Feta Dip<\/a><\/strong> or sour cream.<\/li><li>Enjoy!<\/li><\/ul>\n\n\n\n<p><em>All LC Foods products have full nutritional detail on their labels and website.
