Low Carb Footlong Meatball Sub

Delicious jumbo meatballs on a low carb footlong sub roll!

Ingredients

  • 1lb Ground Beef
  • 1/4 cup chopped Onion
  • 1 Egg, beaten
  • 1/4 cup LC-Seasoned Bread Crumbs
  • 3 Tbsp Heavy Cream
  • 1 tsp Garlic Powder
  • 1 1/2 tsp Italian Seasoning
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 cup Marinara Sauce, no sugar added
  • 4 slices Provolone Cheese
  • 1/4 cup Shredded Mozzarella
  • 1 LC-Sub Roll

Instructions

  1. In a large mixing bowl combine ground beef, onion, egg, bread crumbs, heavy cream and seasonings
  2. Mix together with your hands
  3. Form into 6 jumbo meatballs
  4. Place on a foil lined baking sheet
  5. Bake at 375 for 25-30 minutes
  6. Slice the sub roll the long way
  7. Lay the provolone slices on the bottom half of the bread and place in the hot oven for 5 minutes, or until cheese is melty
  8. Remove from the oven and assemble your meatball sub, pour sauce evenly over the meatballs and sprinkle with shredded mozzarella
  9. Slice and enjoy!
