Low Carb Summer Picnic Pasta Salad
Ingredients
- 2 cups prepared Low Carb Buttery Noodles (2/3 cup cooked)
- 1/2 cup grape tomatoes, halved
- 1/4 cup cucumber, diced
- 2 Tbsp diced red onion
- 1/2 cup cubed cheddar cheese (use your favorite cheese)
- 1/3 cup sliced pepperoni
- 1/3 cup Italian dressing
- 2 Tbsp grated Parmesan cheese
- OPTIONAL: 2 tsp McCormick’s Salad Supreme seasoning
Method
- Cook noodles according to package directions
- Meanwhile, prepare other ingredients
- Allow pasta to cool
- Mix all ingredients together in a large bowl until well coated
- Chill in the refrigerator for 1 hour
- Enjoy!
