Cranberry Angel Biscuits

Cranberry Angel Biscuits
Serves: 8
Delicious cranberry biscuits for breakfast, as a side dish or even a dessert!
For Biscuits:
  • LC Angel Biscuit Mix
  • 1 tsp Instant Yeast
  • 6 Tbsp butter, chopped
  • 7½ tsp water
  • 2 tsp white vinegar
  • ½ cup heavy cream
For Cranberry Filling:
For Biscuits:
  1. Preheat oven to 400
  2. Add ½ package of LC Angel Biscuit Mix to a mixing bowl
  3. Add instant yeast, stir and set aside
  4. In a food processor, add remaining ½ package of LC Angel Biscuit Mix and chopped butter
  5. Pulse to cut butter into mix
  6. Add butter mix to the mixing bowl and stir to combine
  7. In a small bowl, add water, vinegar, heavy cream and stir to combine
  8. Add wet ingredients to dry and stir to combine
  9. With clean hands, form dough into a ball and set aside
Cranberry Filling:
  1. In a small sauce pan, add water and bring to a boil
  2. Add LC-Cranberry Sauce Mix and stir with a whisk
  3. Add cranberries and return to a boil
  4. Reduce heat and boil gently for 8-10 minutes, stirring occasionally
  5. Remove from heat and let cool
  6. Spray a baking sheet with cooking spray
  7. Form dough into 8 equal balls and flatten on the baking sheet
  8. Add 1 tsp cooled cranberry sauce to each flattened biscuit
  9. Close the biscuit around the cranberry sauce and roll into a ball, making a filled biscuit
  10. Bake at 400 for 15 minutes
