
Soup Ingredients:
- 1 10.8 oz. package frozen broccoli florets or about 4 cups fresh
- 2 cups chicken stock
- 1 cup shredded sharp cheddar cheese, plus additional for serving
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ½ cup heavy whipping cream
- ¼ cup butter
Cheesy Garlic Toast Ingredients:
- 4 slices LC Sourdough Bread
- 2 tablespoons softened butter
- 1 teaspoon garlic powder (or to taste)
- ½ cup shredded mozzarella cheese
Method:
Cook the broccoli and chicken stock in a medium saucepan on medium-high heat until the broccoli is tender.
Add all the other ingredients to the pan and stir well. Simmer until the butter is melted, 5 or 10 minutes.
If you have an immersion blender, carefully blend the soup until it’s mostly smooth.
Alternate method, carefully pour all ingredients into a blender and pulse until smooth.
Divide the soup between 4 bowls and garnish with additional cheese if desired.
Cheesy Garlic Toast Fingers:
Turn the oven on and set to broil.
Sread the softened butter on the slices of LC Sourdough Bread.
Place them on a baking sheet and sprinkle the garlic powder and mozzarella cheese on top.
Place the pan in the oven and broil for 2 minutes or until the bread is toasted and the cheese is melted. Watch it closely!
Remove the toast from the oven and cut each slice into 4 pieces. Serve with soup.
