Keto Baked Pimento Cheese Dip with Bacon

Ingredients:

  • 16 oz full fat cream cheese, softened
  • 8 oz. sharp cheddar cheese, shredded
  • 8 oz. colby-jack cheese, shredded
  • 7 oz. jar sliced pimentos, drained and rinsed
  • ¼ cup sour cream
  • 3 tablespoons diced jalapenos (more or less to your preference)
  • 1 tablespoon hot sauce
  • 8 slices crisp cooked bacon, drained and chopped
  • Your favorite LC Bagel Chips

Method:

  • Preheat oven to 350 degrees.
  • Spray a two-quart baking dish with non-stick spray.
  • Thoroughly drain and rinse the pimentos by straining in a fine mesh strainer. Blot with a paper towel to remove most of the liquid.
  • In a medium bowl, mix the cream cheese, shredded cheeses, sour cream and hot sauce until well combined. Fold in the pimentos and bacon until everything is well combined.
  • Pour the mixture into your prepared baking dish and smooth over the top. Bake for about 25 minutes until it’s nice and bubbly and slightly browned on top.
  • Serve with LC Bagel Chips.
