Keto Pork Rind Nachos

This is the perfect guilt-free appetizer recipe for Cinco de Mayo or anytime you want! It’s totally versatile – you can choose to use ground turkey or shredded chicken instead of ground beef and choose your favorite low carb toppings. So, let’s dive in and make some nachos!

Ingredients:

  • 1 package of your favorite LC Rinds (we love the Cheezy Rinds!)
  • 1 lb. ground beef
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. chili powder
  • 1/2 tsp. ground cumin
  • 1/2 tsp. black pepper
  • 1 ½ cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack
  • 1/4 cup sliced or diced jalapeños
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup diced green onions
  • 1/2 cup full fat sour cream
  • 1/2 cup guacamole or diced avocado
  • Optional: no sugar added hot sauce, salsa, fresh chopped cilantro, lime wedges

Method:

Preheat the oven to 375 degrees F

Grease or spray a large oven-proof casserole dish and set aside.

Place a large skillet on the stove on medium heat. Add the ground beef and break it up as it cooks. After the beef is nicely browned, carefully drain excess grease.

Add all of the spices to the cooked ground beef and stir until they are well mixed in. Cook the beef mixture on low for about 2-3 minutes and then remove from the heat.

Pour the pork finds into the prepared casserole dish. Spread the ground beef mixture evenly over the rinds.

Top the beef with the shredded cheddar and jack cheese. Place the dish in the oven and bake the nachos for 8 to 10 minutes or until it is warmed through and the cheese is all melted.

Remove the dish from the oven and top with tomatoes, onions, olives and jalapenos. Add a scoop of sour cream and a scoop of guacamole on top if desired, or serve in separate serving bowls.
