Low Carb Oven Baked Chicken Fajitas


  • 1 yellow pepper sliced into strips
  • 1 red pepper sliced into strips
  • 1 green or orange pepper sliced into strips
  • 1 small red onion sliced
  • 1 pound boneless skinless chicken breast or thighs, sliced into strips
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Your choice of LC Tortilla Shells
  • Low carb toppings of choice


  1. Preheat oven to 400°F.
  2. Slice the peppers, onions and chicken into strips.
  3. Spray a sheet pan with non-stick spray.
  4. Place the peppers, onion and chicken onto the prepared sheet pan
  5. Drizzle the olive oil and sprinkled all of the seasonings on top and stir until everything is coated well.
  6. Place it in the oven for 10 minutes then remove and stir.
  7. Place the sheet pan back in the oven for an additional 10 minutes or until the chicken has reached an internal temperature of 160°F.
  8. Meanwhile, assemble your favorite low carb toppings, such as lettuce, shredded cheese, avocado, and warm the LC Tortilla Shells.
  9. Assemble the fajitas using the warmed LC Tortilla Shells and toppings.
  10. Enjoy!
