Or how about a calzone or stromboli? But first, what is the difference? A calzone is a folded half moon shape while a stromboli is rolled. Either way, make one and fill it with pepperoni, sausage, meatballs, veggies, cheeses, and sauce - you'll enjoy the best low carb pizza or calzone you've had since you started the low carb lifestyle!
Our personal favorite is the buffalo chicken calzone - take one pound of cooked, shredded chicken and mix with 1/4 cup buffalo sauce and 2 tablespoons melted butter in a sauce pan. Heat through. Roll out pizza dough into a round (our mix makes enough for 3 calzones). Brush with olive oil, then spread 1 cup mozzarella cheese to within 1 inch of the edge. Spread chicken mixture over cheese, then top with another cup of mozzarella cheese. Fold in half and pinch edges together. Brush with olive oil and bake in 425 degree oven for 17-20 minutes, or until crust is golden brown. Enjoy!
