Low Carb Bacon Sriracha “Potato” Salad

Try this low carb “potato” salad with a kick, made with cauliflower and sriracha chili sauce. Perfect for your next cookout, picnic or barbecue!

Ingredients

Scale
  • 3 lbs cauliflower florets, steamed
  • 2.5 tbsp white vinegar
  • ¼ tsp salt
  • 1.5 tbsp sriracha chili sauce (see notes below for recipe link)
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup green onion, chopped
  • 4 slices of bacon, cooked
  • paprika, to taste

Instructions

  1. Place steamed cauliflower florets into a large mixing bowl
  2. Add the vinegar and salt and combine carefully with a spatula
  3. Allow the mixture to cool for 15-20 min.
  4. Meanwhile, combine the sriracha, mayonnaise and sour cream in a separate bowl
  5. Once the cauliflower has cooled, fold in the sriracha mixture
  6. Garnish with green onions, bacon and paprika. Serve at room temperature or chilled

Notes

Recipe: Homemade Sriracha

*Note: Substitute LC Brown Sugar Sweetener for traditional brown sugar in this recipe to keep it low carb!
