This recipe makes a moist, dense cake bursting with flavor! For a gluten free version, use our gluten free yellow cake mix.

Low Carb Coconut Lime Cake

  1. Place entire package of LC-Yellow Cake Mix into a large bowl.
  2. Add remaining ingredients and mix well.
  3. Grease and spray a 9" round cake pan, 8"x8" square cake pan or 9-10 cupcake tins.
  4. Pour batter into prepared pan.
  5. Bake at 350 degrees F for 23 minutes or until top springs back and knife inserted into middle comes out clean.
  6. Cool on rack for 15 minutes before removing cake from pan.
  7. Frost with Low Carb Lime Frosting.
