Low Carb Crab Melts

Ingredients:

  • 1 cup crab meat picked over for shells (lump is best, but claw meat will also be great!)
  • ½ cup mayonnaise
  • ¼ cup green onion chopped
  • ¼ cup red bell peppers chopped
  • ¼ cup fresh parsley chopped
  • 1 teaspoon Old Bay
  • 1 tablespoon lemon juice
  • 1 cup shredded white cheddar cheese
  • 2 tablespoons salted butter 
  • LC English Muffins sliced in half
  • 4 tomato slices
  • Parsley to garnish

Method:

  • Mix mayo, parsley, green onion, peppers, lemon juice and Old Bay. Gently fold in the crab meat.
  • Lightly spray a baking sheet with non-stick spray. Turn the oven on to broil.
  • Butter the English Muffins and place them on the sheet pan. Put them in the oven and broil until lightly browned, for 2-3 minutes. This will happen fast, so keep an eye on them. Remove from oven.
  • Scoop the crab mixture onto the toasted muffins, place some of the cheese mixture on top, then broil for 2-3 minutes. Again, watch them closely so they don’t burn.
  • Top with a slice of tomato and more of the cheese mixture, then broil for another 2-3 minutes until the cheese has melted.
  • Top with fresh parsley and serve with a side salad for a delicious meal!
